“It’s so light! It’s like most of the egg disappeared!” My mom marveled at the slightly yellow tinged eggs sitting in her palm. Shaking off her confusion, she dunked a dozen of these eggs into a boiling pot of water. “See? They even float!” Satisfying herself that the eggs had not gone bad or gotten cracked, she pulled herself away to the kitchen table. But we had barely gotten started on the fish when it sounded as if a shot rang out. From the corner of my eye, I saw white shards of egg shell bursting everywhere. One piece landed comically on a glass figurine, giving it a makeshift eyepatch.
I should explain. My parents were attempting their own 鲜蛋, so naturally they had a dozen raw eggs “marinating” in salt water for who knows how long. The strange thing is, though, that this is supposedly how salted duck eggs are made.
That was the closest thing to an apocalypse today, thankfully :P and this has egged me on to try making some salted eggs of my own. Ew, not in that sense, you dirty perv! :P
